Originating in the ancient forests of Yunnan Province, China, Camellia sinensis — Green Tea — has been cultivated and revered for over 5,000 years, first documented in the legendary Shen Nong's herbal compendium around 2737 BCE and later elevated into a full spiritual and philosophical practice through the Japanese tea ceremony tradition of chado.
Green tea is among the most scientifically studied herbs in the world. It is rich in polyphenols — particularly EGCG (epigallocatechin gallate) — and is traditionally valued for its ability to support mental clarity and focused energy, healthy metabolism, cardiovascular function, and antioxidant protection at the cellular level. Unlike black tea, green tea is minimally oxidized, preserving its full spectrum of catechins and L-theanine, an amino acid that promotes calm alertness without the jittery edge of caffeine alone. Its tannins can inhibit iron absorption from plant-based foods — avoid drinking green tea directly with iron-rich meals. During pregnancy, limit consumption to one cup per day. 1. Measure 1–2 teaspoons of Green Tea loose leaf per 8 oz cup.
2. Heat water to 175°F (do NOT use boiling water — it will make the tea bitter).
3. Steep for 2–3 minutes. Longer steeping increases bitterness and caffeine.
4. Strain and enjoy as is, or with a squeeze of lemon peel or a drop of honey.
5. Drink 1–3 cups daily.
For a cold brew (sweeter and smoother): combine 1 tablespoon of Green Tea with 16 oz cold water, refrigerate for 8–12 hours, then strain and serve over ice.
